Most people think that life after 60 is all about relaxing. Well, this may be true for some of us… but, most older adults live pretty busy lives. So, when we find a simple, easy-to-make recipe that is both hearty and tasty, we are always ready to give it a shot!
Today, I want to share my super simple flat iron steak recipe. It’s easy to cook and oh so tasty!
In this variation, the steak is marinated and then fried in a cast-iron skillet with mushrooms and a splash of red wine. Serve thinly sliced across the grain and you won’t even need a knife.
Here’s what you’ll need to get started.
1 tablespoon chopped fresh garlic
2 tablespoons soy sauce
2 tablespoons red wine vinegar
2 tablespoons brown sugar
2 tablespoons of olive oil or vegetable oil.
1 flat-iron steak, about 1.5 lbs
2 tablespoons vegetable oil
1/2 medium onion, sliced
3 cups of sliced fresh mushrooms, chef’s choice
1/2 cup red wine
Salt and pepper to taste
Mix together the garlic, soy sauce, vinegar, sugar and 2 tablespoons of oil in a medium bowl or shallow dish that will hold your steak. Place the steak in the marinade and turn to coat. Set aside. This can be done ahead of time, or just right before… but you will get more flavor with an overnight marinade.
Heat 2 tablespoons of oil in a large skillet over medium to medium-high heat. Add mushrooms and onions; cook and stir until tender. Season with salt and pepper while cooking.
When the mushrooms and onions are pretty well cooked, scoot them over to the sides of the pan. Remove the steak from the marinade and set marinade aside. With the heat on medium-high, fry the steak in the center of the pan for about 7 minutes per side, or longer depending on how thick your steak is. Cook to your desired degree of doneness, but at least 145 degrees F when taken with a meat thermometer.
Remove the steak from the pan and set aside to rest before slicing. This will keep too many of the juices from running out. Pour the remaining marinade into the skillet and stir in red wine. Make sure to get any bits of steak that have stuck to the pan mixed into the sauce. Simmer for a few minutes to cook off the alcohol.
Taste and adjust seasoning with salt and pepper, or add a little sugar if the sauce is too tart. The type of wine used will affect sweetness, so balance it out.
Serve steak thinly sliced topped with mushrooms and sauce! Delicious!
