Do you have a favorite chia seeds recipe? Today, I’d love to share mine. All you need to follow along are some chia seeds, 8oz of coconut milk and your favorite fruit or berries.
Before we get started, I have a confession to make. I’ve never been a good cook. Maybe I was too busy to explore the culinary arts when I was younger. Or, perhaps I simply don’t have the “chef gene.” Whatever the case may be, my early failures in the kitchen led me to avoid cooking until very recently.
It has only been in the last 5 years or so, since my corporate career started to wind down, that I have ventured back into the kitchen for some culinary adventures.
In addition to spicy curries and colorful salads, I am always on the lookout for simple recipes – especially those that include superfoods, like chia seeds.
So, today, I’d like to share a very short video with you about how I like to prepare one of my favorite simple stacks – chia seeks with mango sauce.
Chia seeds have become someone trendy lately. As a superfood, they are high in fiber and contain plenty of healthy omega-3 oils. They are also full of nutrients and antioxidants. They really are a great addition to any healthy aging diet.
They also have a fabulously unique texture and taste when mixed with water or coconut milk (my personal favorite!)
Even their history is fascinating. Chia seeds were discovered in Mexico and were said to have been used by the ancient Aztecs. The word “chia” even means strength! I’ve seen another etymology that says that it comes from the Nahuatl word “chian”, meaning oily. Personally, I prefer thinking about the word strength. I certainly feel stronger after eating them!
This is probably the simplest recipe I know. That said, it’s also one of the tastiest!
First, I take 1-2 tablespoons of chia seeds and mix them into 8oz (about 240ml) of coconut milk. There are no hard and fast “rules” here. Just find a mixture that has the consistency that you enjoy most.
Then, I leave the mixture for about an hour. This creates a fabulous texture, almost like a jelly or thick desert.
Finally, I add some fresh fruit sauce, berries or honey to the mixture. It’s absolutely delicious!
A quick word of caution about preparing chia seeks. Never eat chia seeds “dry.” Always soak them first! The reason for this is that chia seeks absorb a lot of water. The last thing you want is to have them expand in your throat.
If you give them a good soak first, you should have absolutely no problems at all.
